Psychobiotics: When Fermented Foods Become Medicine for the Mind

Grandmother's kefir, the miso of Japanese tradition, German sauerkraut, Korean kimchi, Indonesian tempeh, the kombucha that has conquered supermarket shelves around the world: fermented foods that cultures far removed from one another have cultivated for millennia, often attributing to them virtues that went well beyond nutrition. Digestive virtues, certainly. But also — in the intuitions of ancient physicians and in sapiential culinary traditions — something more subtle: an effect on mood, on energy, on mental clarity. Today that practical wisdom has found a scientific name and a precise biological map.

The term psychobiotics — coined by Irish neuroscientist John Cryan and Professor Ted Dinan around 2013 — refers to those live microorganisms which, ingested in adequate quantities, produce measurable benefits on mental health by acting through the gut-brain axis. A definition that, within a few years, expanded to include the dietary substrates that selectively nourish those microorganisms — prebiotics — and the fermented foods that naturally contain them in high concentrations. Research on these compounds has exploded over the past decade, and the results emerging are opening a radically new perspective on the relationship between diet and the psyche.

A review published in 2026 in the journal Probiotics and Antimicrobial Proteins systematically analyzed the available evidence on fermented vegetables as a source of psychobiotics, with results that deserve careful attention. The clinical studies examined show that regular consumption of fermented foods — particularly those rich in strains of Lactobacillus and Bifidobacterium — is associated with improvements in mood, a reduction in anxious symptoms and improvements in cognitive function, both in healthy individuals and in people with already diagnosed psychiatric conditions.

The biological mechanisms underlying these effects are multiple. The first and most direct concerns the modulation of the gut microbiota: the beneficial bacteria introduced through fermented foods compete with pathogenic strains, reduce intestinal permeability and produce short-chain fatty acids that nourish the cells of the intestinal mucosa and perform anti-inflammatory functions. The second mechanism concerns the production of neurotransmitters: intestinal bacteria are capable of synthesizing serotonin, GABA, dopamine and other neurotransmitters that communicate directly with the central nervous system through the vagus nerve. The third concerns the regulation of the hypothalamic-pituitary-adrenal axis: a healthy microbiota contributes to modulating the stress response, lowering cortisol peaks and reducing the reactivity of the body's biological alarm system.

A review published in Current Psychiatry Reports in 2025 examined the clinical evidence on various dietary strategies — high-fiber diets, fermented diets, ketogenic diets, probiotics and prebiotics in supplemental form — in the treatment of anxiety and depression. The conclusions show that dietary modifications are feasible and beneficial in mild cases of anxiety and depression, with fermented and high-fiber diets among the most strongly supported by the evidence. Notably, these effects emerge even from randomized controlled trials — not only from observational studies — which significantly strengthens the causal hypothesis.

There is, however, one element that the research underlines with clarity and that deserves to be conveyed without softening: not all commercially available fermented foods actually contain live active bacteria. Industrial pasteurization processes, widely used to guarantee product safety and shelf life, inactivate microorganisms. A jar of pasteurized supermarket sauerkraut does not have the same effects on the microbiota as an artisanally fermented product containing live bacteria. The difference is not a matter of marketing: it is biological and clinically relevant.

Equally important is the question of regularity. Studies show that the benefits of fermented foods on the microbiota and, through it, on mental health require sustained consumption over time. This is not an acute remedy — drinking a glass of kefir before an exam will not meaningfully reduce performance anxiety — but a long-term maintenance strategy, in which the fermented diet becomes a stable component of one's nutritional ecology.

What science is returning to us, with the precision of microbiological data, is the confirmation of a principle that traditional cultures had encoded in different forms: food is not merely fuel. It is relationship. It is information. It is communication between the external world and the living system that we are. Fermented foods, in this sense, carry within them the history of millions of years of coevolution between human beings and the microorganisms that inhabit them — a history that modern industrial nutrition has interrupted, and that is worth rewriting, one spoonful of miso at a time.
